The Presidential Election

For those of you who follow it, one of the best websites for following the upcoming presidential election is Real Clear Politics . It has consolidated poll numbers for each state, as well as a compilation of articles for all over the country. Although I have grown very weary of politics over the years, I still find the whole process facinating.

I am not crazy about any of the candidates this year, but I just hope it will be someone who will be true to the values that get him/her elected. As a Mormon, Mitt Romney is interesting, but I have been concerned with his double speak. I'm also concerned with his ability to win the general election, but I guess that no one in the Republican party is much ahead of him in that respect.

It should be an interesting ride...

Butternut Squash

I'm eating my new favorite food...butternut squash. Here is a recipe for butternut squash bisque that is easy and incredibly good.

INGREDIENTS
1 tablespoon canola oil
1 tablespoon unsalted butter
1/2 cup diced onion
3/4 cup diced carrots
4 cups peeled and cubed butternut squash
3 cups vegetable stock
salt and ground black pepper to taste
ground nutmeg to taste
1/2 cup half and half (optional)

DIRECTIONS
Heat the oil and melt the butter in a large pot over medium heat. Cook and stir the onion in the butter and oil under tender.
Mix the carrots and squash into the pot. Pour in vegetable stock, and season with salt, pepper, and nutmeg. Bring to a boil, reduce heat, and simmer until vegetables are tender.
In a blender or food processor, puree the soup mixture until smooth. Return to the pot, and stir in the half and half. Heat through, but do not boil. Serve warm with a dash of nutmeg.
